Basil & Strawberry Mojito – From Elena
These taste like summer in a glass! If hosting, I recommend you make these by the pitcher, rather than by the glass; always a crowd-pleaser! It’s fragrant and slightly sweet, and just perfect for a hot summer’s day.Elena
Slice three strawberries and place at the bottom of a tall glass along with the basil leaves. Pour in the simple syrup and muddle the mixture. Stir in the rum and top with crushed ice.
Top off with club soda and garnish with whole strawberries, a sprig of basil and a lime wedge.
Passion Fruit Martini – From Paul
Better known by a slightly more… risqué name… the passion fruit martini has grown massively in popularity, and it’s easy to see why. Sweet, tangy and refreshing; an ideal drink for summer! My version uses vanilla notes from the vodka to mellow the tang of the passion fruit. Served in a chilled glass, and garnished right, this is one seriously Instagrammable drink, and it tastes great too!Paul
Method Scoop the seeds from one of the passion fruits into the glass of a cocktail shaker. Add the vodka, Passoa, lime juice and sugar syrup. Add a handful of ice and shake well.
Strain into 2 martini glasses, then float half a passion fruit in each. Serve immediately with a shot of Prosecco on the side for the wow factor, and maximum fizz!
A Broken Bramble – from John
The Bramble has been around since the 80s and it really is the perfect summery drink, pairing dry gin with a fruity sweetness. I’ve taken some liberties with my recipe to bring you a Broken Bramble.John
In a rocks glass, muddle the fresh blackberries and the rosemary together and fill glass with crushed ice.
Shake the gin and lemon juice in a cocktail shaker with a good handful of ice cubes then strain into the glass. Drizzle the Crème de Mûres and Chambord over the top so they slowly bleed into the drink. Top up with soda and garnish with blackberries.
